Grilling the Garden

Vegetables

Use up your spare vegetables (and delight your guests) with a grill basket, some olive oil, and seasoning. This is a great way to get rid of veggies who have overstayed their welcome in the fridge, as well as a wonderful means of getting the veggie-averse to eat them.

Ingredients:

  • 1 T olive oil
  • Fresh vegetables, any type (zucchini, mushrooms, asparagus, onions, peppers, and broccoli are all good candidates)
  • Seasoning (Vegetable seasoning, seasoned salt, or garlic pack a lot of punch with no extra calories)
  • Shredded parmesan (optional)

In a large bowl, combine chopped veggies, olive oil, and seasoning. Make sure tougher vegetables like broccoli and peppers are in smaller pieces than softer veggies like mushrooms and onions.

When all veggies are coated, empty into a large grill basket.

Grill on medium to high heat for 5 to 10 minutes a side, depending on the dimensions of your grill basket and the heat of your grill.

Serve on its own or top with a dash of shredded parmesan cheese.
